The Chianti Classico Pèppoli is born in the vineyards of the homonymous estate of the Marchesi Antinori, located in the heart of the DOCG Chianti Classico.
It is mainly produced with Sangiovese grapes and with Merlot and Syrah grapes, harvested in the second half of September. Fermentation takes place, with maceration, in stainless steel tanks at a controlled temperature of 26-28 ° C. After malolactic fermentation, the wine ages for about 9 months in large Slavonian oak barrels and a small part in barrique before being bottled.
It has a ruby red color with violet reflections. The nose opens with intense aromas of violets, enriched by hints of cherry and raspberry, with smoky nuances given by the aging in wood. On the palate it is balanced, with soft tannins and excellent flavor.
Perfect to accompany with roasts and game, it is ideal in combination with medium-aged cheeses, cold cuts and salami
