The quality of the grapes to be allocated to the Riserva type, produced only in the best years, is initially determined with rigorous manual selection in the Pianrosso vineyards, followed subsequently by a long maceration on the marc and a prolonged aging in barrel and in bottle.
Vineyards: 11.69 hectares boast the term "Pianrosso", located in medium-textured soils of Eocene origin between 240 and 360 meters above sea level, where the best grapes are chosen.
Grapes: 100% Sangiovese
Vinification, fermentation and aging: In stainless steel containers and vitrified cement tanks at a controlled temperature by means of cooling jackets and immersion plates.
Aging: In Slavonian oak barrels of 7.5 to 30 hl for over 3 years and bottle aging for more than 12 months.
Color: Ruby red tending to garnet.
Organoleptic characteristics: Intense, ample and complex aromas. Fruity, spicy, sometimes ethereal: the notes of ripe red berry fruit harmonize nicely with multiple spices; the taste is warm, harmonious with pronounced but soft tannins; a full-bodied wine with a long persistence on the nose that will evolve again with a long aging in the bottle.
Service: Uncork one hour before serving and serve at 18 ° C in a "balloon" shaped crystal goblet.
The bottles should be stored in the dark, lying in a cool place and without sudden changes in temperature.
Food pairing: Suitable for accompanying mainly structured second courses of jugged meats, roasted game and furred game. Appropriate with very aged cheeses or tasted only as a meditation wine.
