Buondonno Merlot IGT Toscana is produced with Merlot grapes from a small 5,000 sq m vineyard that wa planted in 1999 on a particularly suitable land, very stony, facing east.
Some experts have defined it as a “Merlot non Merlot” as the acidity and tannic structure are very close to those typical of the territory of origin.

Vinification: harvested around mid-September, it ferments spontaneously with indigenous yeasts in concrete vats where it remains in maceration for at least 20 days in which pumping over and punching down alternate
Aging: for a year it matures in French oak tonneaux where the malolactic fermentation also takes place. It rests in the bottle for a few months before being put on the market
