At Castello di Ama the Rosato has been produced since 1982, following the bleeding technique, practiced after about 12 hours of contact between the must and the skins. With the "Purple Rose", however, the typology is renewed, because it is a few years ago that the Rosato of Castello di Ama has been fermented no longer in steel tanks as it has always been, but in second passage oak barrels. The result is given by a Rosato di Toscana certainly longer-lived than the norm, as well as deeper both in aromas and in taste. An extraordinary Rosé, truly for true connoisseurs!
TASTING NOTES:
Bright and brilliant purple-red color to the eye. The aromas on the nose are basically fruity, characterized by the reference to ripe strawberries and cherries. The same fruits of smell return to the sip, also characterized by mineral notes as well as a pleasant freshness. Excellent persistence.

To be uncorked during an aperitif, it is to be tried in combination with Tuscan crostini with liver pate.
