The Chianti Classico of the Dievole winery is obtained from spontaneous fermentation, with the use of indigenous yeasts, in raw concrete vats, followed by malolactic fermentation; aging, on the other hand, takes place in large, non-toasted French oak barrels for a period of about 13 months and then continues for about 3 months in the bottle. The company's flagship wine and the first ambassador of the territory, this Chianti Classico proves how surprising the results can be when typicality and elegance come together.
TASTING NOTES
Ruby red color. Floral notes of violet dominate the nose; hints of ripe red fruits follow. On the palate it is a full-bodied wine with velvety tannins, with excellent minerality. Balanced and with good persistence.
PAIRINGS
Excellent in combination with first courses with traditional sauces and grilled meats, it is also ideal as an accompaniment to cheeses.
