Municipality of Castellina in Chianti (SI), mainly marly soils exposed to SW at 400 meters above sea level

Grape variety:

100% Sangiovese.

Yield per hectare: about 70 quintals.

Annual production: about 400 hl.

Bottles produced: 53,500 bt. approximately.

In the vineyard: 100% owned grapes.

Spurred cordon and Guyot training.

Mechanical weeding, green manure of legumes every other year.

Use of only Copper, Sulfur and products compatible with the Organic Certification.

Manual harvest.

In the basement:

Traditional vinification with daily pumping over.

Spontaneous fermentation by indigenous yeasts.

No temperature control.

Use of sulphites only.

Maceration on the skins for about 3 weeks.

It rests on the fine lees for about 6 months.

Aging and refinement:

Aging in steel for about 2 years.

Refinement in the bottle for about 6 months before being put on the market.

Alcoholic degrees: 13.5%
