Tasting: “Da varietale autoctono Garganega affinato in ovetto iefrom, the indigenous Garganega aged in ceramic egg, as the back label states. Fermented in stainless steel and aged for a year in a ceramic egg but without the lees. 10% of the wine was aged briefly in Mittelberger oak. No malo; ” I look for freshness and minerality” says Baum.
Recognisable Garganega. There is richness of fruit, but it is quite contained at the same time. Perfumed, sweet pear and chamomile with a flowery note and a hint of brioche and stones. Beautiful citric nerve running through the wine. A little mouth-watering. At first rather neutral and then it opens up.
