THE HISTORY OF WINE

Balifico, mountain Cabernet Sauvignon for the Volpaia Supertuscan.
The first Supertuscans were created in the 70s by Chianti Classico producers who refused to use the production regulations that dictated which varieties to use in order to claim the Tuscan purchase.
Therefore, to identify those wines of superior quality, which the Italian legislation provides for "table wines", the international press introduces the term: Supertuscan.

Since 1172 in Volpaia great Chianti Classico have been produced in organic farming. Already included among the three best wines in the world by Wine Spectator Volpaia is known throughout the world for the beauty of its cellars hidden in the walls of the ancient fortified village. 

The vintage began with a spring that was initially hot and then very rainy until mid-June, followed by a hot and dry summer with strong water stress on the vines. A heavy rain in mid-September, followed by the lowering of the temperature, made it possible to perfectly complete the ripening of the grapes.

Produced since 1985, Balifico IGT was immediately recognized as a Supertuscan. Balifico is the name of the prestigious Volpaia vineyard from which the grapes with which it is produced come.
